Best Ever Cowboy Cookies (Inspired by The Pioneer Woman)
Living in the country has always been a dream of mine, and this summer, it finally came true! We moved to a rustic farmhouse-style home on five rolling acres in the Texas countryside. It’s an absolute heaven here!
Ree Drummond (aka The Pioneer Woman) has always inspired me. Her adventurous spirit and her emphasis on family come through on her blog and TV show, and it’s something I admire deeply.
With football season kicking off, we decided it was the perfect time for a cookout at our new country home, with room for all our friends and family. And, of course, no cookout is complete without an amazing dessert (or two)!
These Cowboy Cookies are my homage to The Pioneer Woman herself. Believe it or not, they’re made with her brand new BBQ sauce! Trust me, this sauce is like no other and brings out a flavor in the cookies that’s truly unforgettable.
What Are Cowboy Cookies?
Cowboy cookies are basically chocolate chip cookies with a bunch of extra goodies mixed in. There’s no “right way” to make them—you can add all your favorite mix-ins!
For these cookies, we started with a classic chocolate chip cookie dough and added big chunks of semi-sweet chocolate chips. Then, we tossed in toffee bits, chopped pecans, and pretzel pieces for even more deliciousness.
But the secret ingredient that truly sets these cookies apart is The Pioneer Woman’s Apple Brown Sugar BBQ Sauce. Made with chunks of tart apple and brown sugar, this BBQ sauce brings a molasses-like depth that takes these Cowboy Cookies to the next level.
Cowboy Cookies Ingredients
- 1 cup butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 egg yolk
- 1 teaspoon vanilla extract
- 2 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup pretzels, chopped
- 1/2 cup toffee bits
- 1 cup chocolate chips
- 1/2 cup chopped pecans (optional)
- 3 Tablespoons of The Pioneer Woman’s Apple Brown Sugar BBQ Sauce
Cowboy Cookies
Ingredients
- 1 cup butter softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup pretzels chopped
- 1/2 cup toffee bits
- 1 cup chocolate chips
- 3 Tablespoons The Pioneer Woman's Apple Brown Sugar BBQ Sauce
- 1/2 cup pecans chopped (optional)
Instructions
- Cream butter and sugar in standing mixer until light and fluffy.
- Add eggs and vanilla and continue mixing.
- Add flour, baking soda, and salt and mix until well incorporated
- Add pretzel pieces, toffee bits, chocolate chips, pecans (if using), and Pioneer Woman Apple Brown Sugar BBQ Sauce and mix until just combined.
- Use a medium cookie scoop to portion dough onto a prepared baking sheet.
- Bake for 15 minutes at 325°F.
